Being a Monday and our favourite Lunch-time restaurant "The LOFT" is closed on Mondays we ventured in search of a good alternative ~ and ~ we sure found it.
The Hotel Principe's Restaurant has old-time charm, an authentic "Ecuadorian" Look ~ R-E-A-L waiter service and excellent value for money.
The Al Murze - fixed 'executivo' lunch comes with a Fruit Juice ( in our case Granadilla juice), a fantastic Potato soup (almost too much to eat), a main course of Chicken fillet, Lentils and Rice. For desert there was a cake with fruit sauce.
The entire lunch was served by a very fast and very attentive Waiter ~ and the cost......just $2.50/each.! That's amazing.
The décor is just exactly what a fantasy of a South American Restaurant should look like ~ sort of early 20th century with a touch of roaring 30's thrown in.
A wonderful experience.

This hotel is built in a well conserved old haus. A lot of wood with nice style. Very well located in the middle of old downtown, close to everything. Price and quality is acceptable. Cuenca has a very special flair, nice weather, beatiful nice walks around the river Tomebamba. A lot of places to eat and have good time.

Hotel Principe was not our first choice of hotels in Cuenca but was an acceptable alternative.  The interior of the hotel is very attractive, including the dining area, lobby, and rooms.  The location is very good, near sites and restaurants.  The one fault we found was that rooms either faced the street (and thus were noisy, but you could open the windows for ventilation [more noise]) or they were interior rooms that were uncomfortably warm with windows that opened only to the interior of the hotel (better than nothing) and a window in the shower that opened to a wall.  There is a noticeable temperature difference between the private rooms and the dining area.  We inquired about getting a fan but that went nowhere.  Breakfast is served earlier (at 7:10) than many other places in town, which is helpful if you are an early riser.  The bed was comfortable, the shower water was warm with good pressure, and there was ample room to hang clothes.  At $54 for 2 people, including tax and breakfast, the hotel may not be the best value around but it is very attractive.

Located 3 blocks from the central square and 3 blocks to the main 
(tourist) market, this is in a great location. The breakfast (included) was basic but good (eggs, rolls and coffee/tea), rooms were roomy and beds were comfortable.  As the other poster mentioned, the restaurant has a high (3 stories) open area, so it's a little breezy (nothing a light jacket can't take care of). A double costs $42/night. If you do have a room that overlooks the street, beware of the major holidays, as people think nothing of using the streets as a dance hall and blasting their stereo until the wee hours of the morning. We asked for an inner room after one such party on Dec 30.

What a Crown Jewel - right in the old city and no-one knows it.

Great central location in the heart of old Cuenca

like in a church you can have your breakfast, basic but good, under an enormous crucifix...
rooms are simple but correct, it can be noisy if some people are staying late or soon in the morning in the patio talking, drinking, laughing...
that's what happened during my stay.
otherwise it's ok, nothing special...
