They have a very nice orchard and kitchen-garden where they harvest the vegetables you get in the table. 
My favorite dishes are "Sopa de Milpa" and "Ensalada de Nopales". Ask for the fresh vegetable dishes that are not in the menu. 
They have a very nice local trout, cooked in different ways. 
Another highlight are the "sopes de papa", a tortilla with cooked potato with shredded chicken.
If you go for breakfast they have organic eggs. Ask for the "pan de pulque", a delicious bread that uses "pulque" as yeast. They have homemade mermalades as well as honey.

We spent 4 nights at the hotel in February. It is actually located by the lake in San Miguel Regla and most of the accommodation consists of cabins, some with one and some with two bedrooms. The tariff amounted to about £50 per night. 

 We were the only people staying there during our 4 days and so we had both the hotel and the restaurant pretty much to ourselves. The rooms are clean and spacious and our cabin was just a few step away from the lake, where you can see various species of heron, especially in the evenings. Our room was also equipped with a jacuzzi, also a temazcal, a kind of Aztec sauna, which will be heated for you on request, for an extra £20. We also had a little garden to ourselves, good for viewing the wildlife. The hotel also arranges short boat trips on the lake, an experience worth taking.

The food was quintessentially Mexican - huevos rancheros etc, chilaquiles or molletes for breakfast, sopa de tortillas, enchiladas, sopes, quesadillas etc for lunch and dinner, and well up to standard..  We also asked the owner where we could get the local speciality, pastes, and the next day he had them prepared on the premises for us. They were delicious. These 'pastes' were introduced by Cornish mine workers who came to work the gold mines in the area over 100 years ago, and they have survived as a local version of Cornish pasties. Another day the hotel prepared a picnic lunch for us at a very reasonable price.  They were most obliging.

If you are looking for a few days away from the big city or a short stay of pure relaxation this is as good as any in the area.  There are also lots of interesting places to visit nearby, including ravines, basalt rocks and mountain walks. Just ask the owner for details (I am afraid I do not recall his name).
